Healthy Breakfast Spinach Pancakes (gluten and dairy free)

So I sort of made this recipe up (I tweaked it from what my mother in law gave me by adding the spinach, honey and vanilla). ENJOY!


4 eggs
2 c spinach
1 small zucchini (optional)
1 banana
1 c rolled oatmeal (no steal cut or already cooked oatmeal)
1 tsp vanilla
1-2 Tbs honey

1 tbs coconut oil to cook the batter in

-Blend it all together until smooth, but not too smooth and bubbly
-In a pan that has the coconut oil melted in it (make sure the temperature is no higher than Medium heat), add the batter and cook both sides until its cooked through.

Eat and enjoy. Makes +-15
